Eggnog Bundt Cake

Ingredients

  • 1/2 cup + 2 tbsp butter, softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup full fat eggnog

Ingredients for the Eggnog Glaze

  • 1 1/2 cups icing sugar
  • 2-4 tbsp eggnog
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla

Directions

  1. Preheat oven to 350.
  2. Cream butter and sugar.
  3. Add eggs, one at a time, mixing in between, and vanilla. Mix until well combined.
  4. In a small bowl, mix flour, baking powder, cinnamon, and nutmeg.
  5. To the butter/sugar mixture, add flour and eggnog, alternating between the two (flour three times and eggnog twice), making sure to completely blend in between each addition.
  6. Add batter to greased and floured bundt pan.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the centre comes out clean.
  8. Meanwhile, make the glaze. Whisk together icing sugar, eggnog, cinnamon, and vanilla. Allow cake to cool and flip out of the pan.
  9. Drizzle with the glaze. If you want a thicker glaze, add more icing sugar. Serve with fruit, or ice cream...or all on it’s own! Enjoy!


Peppermint Bark

Ingredients

  • 2 1/2 cups dark chocolate, chopped
  • 3 cups white chocolate, chopped
  • 1/4-1/2 tsp peppermint extract
  • 8 Candy Canes, crushed (or whatever you have lying around!)

Directions

  1. Line a baking sheet with parchment paper.
  2. Melt the dark chocolate in the microwave slowly, 15-30 seconds at a time, stirring in-between, until it is completely melted.
  3. Pour onto the baking sheet and spread out until it’s about a cm thick. Place in fridge to set.
  4. Meanwhile, melt the white chocolate using the same method-very slowly.
  5. Once melted, add the peppermint extract, and 1/3-1/2 of the candy canes. Mix well.
  6. Making sure the dark chocolate is set, carefully pour overtop and spread to the edges. It’s ok if it spills over the dark chocolate.
  7. Sprinkle the remaining candy canes overtop and place back in fridge to set completely (about an hour or overnight).
  8. Remove from parchment and break into pieces. Enjoy!


Grinch Pops

Ingredients

  • Green Grapes, washed
  • Strawberries, washed with stem cut off
  • Bananas, sliced
  • Mini Marshmallows

Directions

  1. On a long toothpick, place in this order: the green grape, a slice of banana, strawberry (cut side facing the banana), and top with a mini marshmallow. They should look like the grinch head wearing a Santa hat.
