Apple Pancake Roses
Ingredients
- 1 cup milk
- 1 egg
- 2 tbsp oil
- 2 tbsp sugar
- 1 tsp vanilla
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch salt
- 2-3 red skinned apples, thinly sliced (skin on)
Directions
- Preheat oven to 350.
- In a blender, add milk, egg, oil, sugar, and vanilla. Blend.
- Add flour, baking powder, baking soda, and salt. Blend just until mixed.
- Pour batter into silicone baking cups or well greased muffin tins, until 1/3 full.
- Slice apples very thin and place in microwave on paper towel for 30 seconds. This will soften the apple and make it easier to make the roses.
- Overlap sliced apples, skin facing up, into the pancake batter. Don’t overthink the “rose” shape, just keep filling up the baking cup until you get as close to the middle as you can with the apple slices.
- Bake for 10-15 minutes-this will depend on your oven and how much batter is in the cups. Bake until a toothpick inserted in the middle comes out clean.
- Dust with icing sugar and cinnamon and enjoy!
