Buffalo cauliflower brain

Create this ghoulishly delicious appetizer to get the party started.

Ingredients

  • 1 head cauliflower, whole
  • 4 beets, peeled and quartered
  • 1/4 cup buffalo sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt, to taste
  • 3 tablespoons tomato paste
  • 1/4 cup blue cheese, crumbled
  • 1/4 cup crispy onions

Directions

  1. Begin by adding our peeled beets to a large pot of water.  Bring up to a gentle boil, then add the cauliflower head.  Boil for five to seven minutes, or until the cauliflower is a nice pink hue. 
  2. Preheat your oven to 375° F. 
  3. Remove the cauliflower then dry it completely. 
  4. Mix the hot sauce, garlic powder, onion powder, and paprika then paint all over the cauliflower with a pastry brush.  Season with salt all over, then drizzle on the olive oil to cover.  Place the tomato paste in a piping bag (loosen with a splash of water if needed) and the pipe skinny red lines all over the cauliflower to mimic the brain's veins. 
  5. Then transfer to a baking sheet with a wire rack on top and roast for 45 minutes, or until tender. 
  6. While the cauliflower bakes, take the beets from the water and pass them through a juicer to create "blood". 
  7. When ready, splash some beet blood on your serving platter. 
  8. Top with the cauliflower brain, followed by some blue cheese and crispy onions. 
  9. Serve with a big steak knife plunged on top. Enjoy!
