Ham and cheese baked macaroni

Ingredients
- 3 tablespoons unsalted butter, melted and divided
- 2 cups elbow macaroni
- 2 cups whole milk
- 1/4 cup all purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground pepper
- 8 oz cooked or smoked ham, chopped
- 4 green onions, thinly sliced
- 2 cups grated aged gruyere cheese, divided in half
- 1 cup grated provolone cheese, divided in half
- 1 cup breadcrumbs
Directions
- Heat your oven to 350° F.
- Lightly butter a two-quart baking dish with one tablespoon of melted butter.
- Cook the macaroni in boiling salted water. Cook for two minutes under the cooking instructions labelled on the package.
- Drain pasta in a colander. Set to the side.
- In a large saucepan over medium heat, combine milk, and flour and whisk thoroughly.
- Stir in salt, onion powder and pepper.
- Cook, stirring, until thickened and bubbly.
- Stir in chopped ham, greens and half of both kinds of cheese.
- Cook until the cheese has melted and then remove from heat.
- Add the drained macaroni to the cheese sauce, and stir well.
- In a small bowl, combine the breadcrumbs with the remaining melted butter.
- Stir until all of the breadcrumbs are thoroughly soft.
- Spoon the macaroni mixture into the prepared baking dish.
- Sprinkle with the remaining cheeses and then sprinkle the buttered breadcrumbs over the cheese layer.
- Bake for 25 to 30 minutes or until the topping is golden brown and the mac and cheese is hot and bubbling around the edges.
- Let rest for 10 minutes before serving. Enjoy!
