Nut and fruit breakfast bars

Make these nutritious bars in the microwave to set your day up for success.

Ingredients

  • 2 cups quick oats
  • 2 cups crispy rice cereal
  • 1/2 cup dry roasted salted peanuts
  • 1/2 cup dried cranberries
  • 1/2 cup unsweetened desiccated coconut
  • 1/2 cup sunflower seeds
  • 1/2 cup creamy peanut butter
  • 1/2 cup packed brown sugar
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. In a large bowl mix together oats, cereal, peanuts, cranberries, coconut, and sunflower seeds.
  2. To a microwave-safe bowl add peanut butter, brown sugar, and honey. Heat on high for one minute. Stir, and then heat on high again for one minute. Stir again until smooth. Then add vanilla and salt, and mix until well combined.
  3. Pour peanut butter mixture over oat mixture, and mix until all ingredients are well coated.
  4. Spray an eight-by-eight-inch baking pan with non-stick spray and line it with parchment paper. Pour the mixture into the tray and press down firmly to create one even layer. Chill in the fridge for 30 minutes to set.
  5. Once firm, cut into eight bars. Store in an air-tight container. Enjoy!
