Quick PEI lobster roll


  • 1.5 lb cooked lobster
  • 2 tablespoons mayonnaise
  • Juice of 1/2 lemon
  • 1/4 bunch tarragon
  • Salt and black pepper
  • 1/4 bunch chives
  • Celery leaves
  • Lemon zest
  • 2 top-cut buns


  1. Coarsely chop the cooked lobster meat. 
  2. Fold in the mayonnaise, lemon juice, tarragon, salt and black pepper. 
  3. Pile the mix into two buttered and toasted top-cut buns.
  4. Top with finely chopped chives and garnish with celery leaves and some lemon zest. Serve and enjoy!
