Ingredients
1 1/2 cups self-raising flour
1 cup granulated sugar
1/2 cup cocoa powder
1/2 teaspoon kosher salt
4 tablespoons unsalted butter
3/4 cup whole milk
3/4 cup brown sugar
1 1/2 cups boiling water
Directions
Grease a nine-inch glass round baking dish with butter.
In a bowl whisk together flour, granulated sugar, one-quarter cup of cocoa, and salt until well combined.
To a microwave-safe bowl add butter. Microwave on high for one minute or until melted. Then add milk, and flour mixture. Mix to form a batter.
Spread batter evenly into the prepared baking dish.
In a small bowl mix together the remaining one-quarter cup of cocoa and brown sugar until no lumps can be seen. Sprinkle the mixture evenly over the batter.
Pour boiling water gently over the back of a soup spoon over the baking dish, moving the spoon until the surface of the cake is evenly covered with water.
Microwave on high for 12 minutes. Allow it to sit for five minutes before serving.
Serve with a scoop of vanilla ice cream and a generous drizzle of whipping cream. Enjoy!
