Baked oysters with tomato chorizo butter

Baked oysters are a great appetizer for entertaining or as a main meal. They’re easy to prepare and are made with just a few simple ingredients. 



  • 12 oysters, medium-sized
  • 1/2 lb unsalted butter, room temperature
  • 2 links grilled chorizo sausages
  • 2 Roma tomatoes, cut in thick slices
  • 1 lime, cut in half
  • 1 teaspoon chilli powder
  • 1 tablespoon garlic
  • 1/2 teaspoon salt
  • 1 tablespoon parsley
  • 1 tablespoon panko bread crumbs


  1. Preheat grill to 400° F 
  2. Grill tomatoes, limes, and chorizo sausage until there is a nice sear on both sides of all and the chorizo is cooked through.  Remove from the grill and allow to rest.
  3. In a blender add softened butter, garlic cloves, chilli powder, grilled lime juice, parsley, and salt. Blend until the smooth buttery texture and fully incorporated.
  4. Once cooled, dice chorizo and tomatoes into small bite-size pieces. Put the butter into a large bowl and add chorizo, and grilled tomato, mix with a spatula or spoon until fully incorporated.  
  5. Shuck the oysters and loosen the meat from their shells leaving the juice.
  6. Add a heaping spoonful of tomato chorizo butter to the oyster meat inside the shell, fully covering the meat and juice.
  7. Sprinkle breadcrumbs on top of each oyster. Then broil each oyster until the top turns golden brown and bubbly.
  8. Serve with halved limes on the side. Enjoy!
