Baked oysters with tomato chorizo butter

Baked oysters are a great appetizer for entertaining or as a main meal. They’re easy to prepare and are made with just a few simple ingredients.

- 12 oysters, medium-sized
- 1/2 lb unsalted butter, room temperature
- 2 links grilled chorizo sausages
- 2 Roma tomatoes, cut in thick slices
- 1 lime, cut in half
- 1 teaspoon chilli powder
- 1 tablespoon garlic
- 1/2 teaspoon salt
- 1 tablespoon parsley
- 1 tablespoon panko bread crumbs
Directions
- Preheat grill to 400° F
- Grill tomatoes, limes, and chorizo sausage until there is a nice sear on both sides of all and the chorizo is cooked through. Remove from the grill and allow to rest.
- In a blender add softened butter, garlic cloves, chilli powder, grilled lime juice, parsley, and salt. Blend until the smooth buttery texture and fully incorporated.
- Once cooled, dice chorizo and tomatoes into small bite-size pieces. Put the butter into a large bowl and add chorizo, and grilled tomato, mix with a spatula or spoon until fully incorporated.
- Shuck the oysters and loosen the meat from their shells leaving the juice.
- Add a heaping spoonful of tomato chorizo butter to the oyster meat inside the shell, fully covering the meat and juice.
- Sprinkle breadcrumbs on top of each oyster. Then broil each oyster until the top turns golden brown and bubbly.
- Serve with halved limes on the side. Enjoy!
