Ingredients
10 oz mahi mahi
1 teaspoon salt
1 tablespoon olive oil
1/2 pineapple, grilled
2 egg yolks
1 tablespoon Sriracha
2 tablespoons lime juice
1 teaspoon ginger
1/2 teaspoon garlic
1 teaspoon soy sauce
1 cup vegetable oil
1/2 teaspoon salt
Directions
Cut the mahi mahi horizontally into two-inch pieces. Place the fish onto a skewer and lay on a tray.
Preheat the BBQ to high heat.
Slice a pineapple into thick half rounds. Drizzle all with oil and season with salt.
Oil the grill and place the fish and the pineapple on heat.
Char the pineapple for two minutes a side and turn the mahi mahi every 90 seconds to cook fully.
Remove the pineapple and fish, and allow mahi mahi to rest.
Add grilled pineapple to a blender. Then add garlic, ginger, one egg yolks, lime juice, sriracha, sesame oil, and soy sauce. Start the blender on low and raise to medium. Then slowly add the oil to emulsify the sauce.
Serve Kebabs with sauce and garnish with grilled pineapple. Enjoy!
