Ingredients
2 tablespoons toasted sesame oil
2 tablespoons soy sauce
2 tablespoons rice wine vinegar or white wine vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
2 garlic cloves, finely minced
Freshly ground black pepper
400 g oyster mushrooms
Mayonnaise, preferably Japanese mayo
2 tablespoons finely chopped chives or green onion
1 tablespoon toasted sesame seeds
Directions
In a large bowl, whisk together the sesame oil, soy sauce, vinegar, maple syrup, Dijon, and garlic. Season with pepper, toss in the mushrooms to coat, and set aside for 30 minutes or up to two hours to marinate.
Heat your grill too high. Lightly oil the grates of the grill and transfer them to the marinated mushrooms. Cook the mushrooms for about two minutes per side or until well charred, pressing down lightly on the mushrooms with a spatula to achieve a better char.
Drizzle or swipe a little mayonnaise onto a serving dish and top with the mushrooms. Scatter with chives or green onion and toasted sesame seeds. Enjoy!
