Simple balsamic vinaigrette

This is an easy recipe that is open to lots of adaptation! You can substitute other vinegar, different sweeteners, and other neutral oils like canola or sunflower. Just remember that you need a balance of sweet, salty, sour, and rich flavours. Keep the jar tightly sealed in the fridge, and it’s ready to go whenever you need it.

Ingredients

  • 1/2 cup olive oil (sunflower or canola are options as well)
  • 1/4 cup balsamic vinegar (apple cider or red wine vinegar will work too)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon maple syrup (or honey, or sugar)
  • Kosher salt and freshly ground pepper, to season

Directions

  1. In a small mason jar, combine vinegar, mustard, and maple syrup, and season with salt and pepper. 
  2. Cover with lid and screw on tightly. Taste and adjust seasoning as necessary. Enjoy!
