Arugula and herb tabbouleh salad

Ingredients

Dressing

  • 3 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1 teaspoon oregano

Salad

  • 2 cups arugula
  • 1/4 bunch parsley, finely chopped
  • 1/4 bunch dill, finely chopped
  • 1/4 bunch cilantro, finely chopped
  • 1/2 bunch scallion, finley chopped
  • 1/4 bunch mint, finely chopped
  • 1/3 cup bulgur, cooked and cooled
  • 2 tomatoes, roughly chopped

Serve

  • Pinch of extra salt

Directions

Dressing 

  1. Whisk together the lemon juice, olive oil, and oregano along with a pinch of salt and pepper to taste. Set aside. 

Salad 

  1. In a large bowl, combine the arugula, herbs, cooked and cooled bulgur, and chopped tomatoes.

Serve

  1. Dress with the lemon vinaigrette and season with a pinch of extra salt. Enjoy!
