Arugula and herb tabbouleh salad

A refreshing and trendy salad to give a try this season.

Ingredients
Dressing
- 3 tablespoons lemon juice
- 1/3 cup olive oil
- 1 teaspoon oregano
Salad
- 2 cups arugula
- 1/4 bunch parsley, finely chopped
- 1/4 bunch dill, finely chopped
- 1/4 bunch cilantro, finely chopped
- 1/2 bunch scallion, finley chopped
- 1/4 bunch mint, finely chopped
- 1/3 cup bulgur, cooked and cooled
- 2 tomatoes, roughly chopped
Serve
- Pinch of extra salt
Directions
Dressing
- Whisk together the lemon juice, olive oil, and oregano along with a pinch of salt and pepper to taste. Set aside.
Salad
- In a large bowl, combine the arugula, herbs, cooked and cooled bulgur, and chopped tomatoes.
Serve
- Dress with the lemon vinaigrette and season with a pinch of extra salt. Enjoy!
