A refreshing and trendy salad to give a try this season.

Ingredients
Dressing
3 tablespoons lemon juice
1/3 cup olive oil
1 teaspoon oregano
Salad
2 cups arugula
1/4 bunch parsley, finely chopped
1/4 bunch dill, finely chopped
1/4 bunch cilantro, finely chopped
1/2 bunch scallion, finley chopped
1/4 bunch mint, finely chopped
1/3 cup bulgur, cooked and cooled
2 tomatoes, roughly chopped
Serve
Pinch of extra salt
Directions
Dressing
Whisk together the lemon juice, olive oil, and oregano along with a pinch of salt and pepper to taste. Set aside.
Salad
In a large bowl, combine the arugula, herbs, cooked and cooled bulgur, and chopped tomatoes.
Serve
Dress with the lemon vinaigrette and season with a pinch of extra salt.
