Green beans in tomato sauce

Fasolakia aka green beans in tomato sauce is a staple on a Greek family table and is both delicious and nutritious.  It is totally vegan and can be served at room temperature.  Everything is added to a pot and simmered gently until tender.

Ingredients

  • 3 tablespoons extra virgin olive oil (45 ml)- or up to 1/3 cup
  • 1 onion, chopped
  • 2 cloves garlic, sliced
  • 4 cups fresh trimmed green beans (2 pounds)
  • 3 medium new potatoes, peeled and halved
  • 2 cups good quality plum tomatoes with juice, crushed (500 ml)
  • 1/2 cup water
  • Salt and pepper, to taste
  • Fresh chopped parsley, to taste

Directions

  1. Trim and wash beans.
  2. Heat olive oil in a large pot or casserole over medium setting and sweat onions and garlic, until just translucent, about two minutes.   
  3. Add the trimmed beans and potatoes. Stir to just coat in oil and garlic.
  4. Add tomato sauce and water and season with salt and pepper. Bring to a boil over medium heat. Cover and simmer for 45 to 50 minutes until beans and potatoes are tender.  
  5. Sprinkle with parsley and serve. Enjoy!
