Fasolakia (Green beans in tomato sauce)

This staple on a Greek family table is both delicious and nutritious.  It is totally vegan and can be served at room temperature.  Everything is added to a pot and simmered gently until tender.  It’s a easy as that.

Ingredients

  • 3 tablespoons extra virgin olive oil (45 milliliter)
  • 2 cloves garlic, sliced
  • 4 cups fresh trimmed green beans (2 pounds)
  • 3 medium new potatoes, peeled and halved
  • 2 cups prepared good quality tomato sauce (500 milliliter)
  • 1 cup water (250 milliliter)
  • salt and pepper to taste
  • fresh chopped parsley to taste

Directions

  1. Trim and wash beans. Heat olive oil in a large pot or casserole over medium setting and sweat garlic, until just translucent, about two minutes.  
  2. Add the trimmed beans and potatoes. Stir to just coat in oil and garlic.
  3. Add tomato sauce and water and season with salt and pepper. Bring to a boil over medium heat. 
  4. Cover and simmer for 35- 40 minutes until beans and potatoes are tender.  Sprinkle with parsley and serve.
