Mac and cheese

Cottage cheese has 17 grams of protein per half cup, and if you puree it, it makes the sauce extra cheesy and creamy. Add whatever frozen veggies you like. Frozen veggies are pre-cooked and flash-frozen so they cook quickly in the microwave.



  • 1/2 cup raw whole grain macaroni
  • 1 cup water
  • Pinch of salt
  • 1/4 cup cottage cheese (2-4%)
  • 1 teaspoon cornstarch
  • 6 tablespoons orange cheddar cheese, grated, divided
  • 1/4 cup frozen baby peas
  • Pinch of salt and pepper, to season
  • Garnish with sprig parsley


  1. Mix the macaroni, water, and salt in a large microwavable mug. Microwave on high for three minutes, and then stir. Drain the cooking water.
  2. In a mini food processor or blender, puree the cottage cheese, cornstarch, one-quarter of the shredded cheddar, and a pinch each of salt and pepper.
  3. Mix with the cooked pasta in the mug, along with the frozen peas. Top with the remaining two tablespoons of cheddar cheese.
  4. Microwave for two minutes until gooey and melted. Enjoy!
