These super cute tiny pancakes are the cutest breakfast you’ll ever make and eat!

Ingredients
1 1/2 cups baking flour
3 tablespoons maple sugar
2 teaspoons baking powder
1 teaspoon salt
2 large ripe banana, mashed
1/2 cup vanilla coconut yogurt
3/4 cup oat milk (or milk of your choice, have extra for the cereal bowl)
2 large eggs
1 tablespoon pure vanilla extract
Salted butter
1 pint fresh raspberries
Pure maple syrup
Directions
In a bowl combine the flour, sugar, baking powder, and salt. In a separate bowl combine the mashed bananas, coconut yogurt, oat milk, eggs, and vanilla. Add the wet ingredients to the dry ones and combine without over-mixing.
In a large non-stick skillet on medium heat, add in the salted butter and melt. Drop the mini (loonie-sized pancakes) and as soon as they slightly bubble flip. Cook until golden then remove and place onto a dish. This goes really really quick!
To serve these in a SUPER fun way place them into a cereal bowl add in a large handful of mini pancakes, top with your choice of milk, and fresh raspberries top a quick drizzle of maple syrup and serve. Enjoy!
