This quick and flavourful vegetable side dish comes together in less than fifteen minutes. Vitamin-rich baby bok choy is steamed with sesame oil and soy sauce in the microwave and is drizzled with a quick miso sauce.
1 tablespoon white or yellow miso paste
1 tablespoon maple syrup
1 teaspoon tamari, soy or coconut aminos
1 teaspoon rice wine vinegar
1 teaspoon sesame oil
1 teaspoon sriracha (optional)
1-2 tablespoons extra virgin olive oil
2 heads bok choy, quartered and chopped into 1 inch pieces
Salt and pepper, to taste
2 teaspoons white and black sesame seeds, toasted
In a bowl mix together the miso, maple, tamari, vinegar, sesame oil, and sriracha. Set aside.
Add the oil to a large skillet and add in the tougher inner bok choy pieces first. Add a pinch of each salt and pepper.
Once softened, at the tops.
Pour in the miso glaze and toss everything until caramelized and sticky.
