Salt-baked golden potatoes

Smashed golden potatoes seasoned oh so well with kosher salt.

Ingredients

  • Potatoes (approx 4-5 per person)
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon kosher salt

Directions

  1. Cook the potatoes in simmering water that is heavily salted, and make sure the water tastes like the ocean. Cook the potatoes until fork tender, and strain the water off the spuds. 
  2. Gently crush the potatoes and toss in two tablespoons of extra virgin olive oil and one teaspoon of kosher salt. 
  3. Put on a baking tray and roast in a preheated 400° F for 25 minutes until they are golden brown and crispy. 
  4. Serve immediately. Enjoy!
