A taquito, tacos dorados, rolled taco, or flauta is a Mexican food dish that typically consists of a small rolled-up tortilla that contains filling, including beef, cheese or chicken.

  1. Sauté the onions garlic and jalapeños in a pan on medium heat with a tsp oil, when soft add the tomatoes and corn and cook for another couple minutes. Or until there is no liquid. Set aside.
  2. Debone and shred the leftover chicken in a bowl. Add the cooked mixture, barbecue sauce, sour cream, both kinds of cheese, and spices and mix well.
  3. As two tablespoons of the chicken filling into each tortilla, roll, and secure with a toothpick. And set aside
  4. In a large pan over moderate heat, warm one-quarter cup of oil until it sizzles. And work in batches keeping the pan clean and adding fresh oil when needed. Pan-fry the tortillas until they are golden brown about two to three minutes per side.
  5. Place on a paper towel, to remove excess oil.
  6. Serve with your favourite salsa and guacamole. Enjoy!
