Taquitos
A taquito, tacos dorados, rolled taco, or flauta is a Mexican food dish that typically consists of a small rolled-up tortilla that contains filling, including beef, cheese or chicken.

- Sauté the onions garlic and jalapeños in a pan on medium heat with a tsp oil, when soft add the tomatoes and corn and cook for another couple minutes. Or until there is no liquid. Set aside.
- Debone and shred the leftover chicken in a bowl. Add the cooked mixture, barbecue sauce, sour cream, both kinds of cheese, and spices and mix well.
- As two tablespoons of the chicken filling into each tortilla, roll, and secure with a toothpick. And set aside
- In a large pan over moderate heat, warm one-quarter cup of oil until it sizzles. And work in batches keeping the pan clean and adding fresh oil when needed. Pan-fry the tortillas until they are golden brown about two to three minutes per side.
- Place on a paper towel, to remove excess oil.
- Serve with your favourite salsa and guacamole. Enjoy!
