Sikil Pak is a traditional Mayan dish made from roasted pumpkin seeds and tomato. It’s a hearty appetizer, often enjoyed during Yucatecan harvest time.

Ingredients
250 g of pumpkin seeds
1/4 white onion
4 roma tomatoes
1 habanero chile
1 teaspoon salt
4 pieces of cilantro
Directions
Preheat a saute pan or griddle (Comal in Mexico) to medium heat.
Spread the pumpkin seeds and toast them until golden and crispy. Let them cool in a tray.
In the same pan cook onions, tomatoes, and chile habanero until they get soft and dark in colour on the outside. Let them cool in a tray.
Once everything is cool place the seeds in the food processor or a volcanic stone mortar and pestle, and blend.
Add onions and tomatoes and blend.
Add the habanero with no seeds and continue to mix until it becomes a paste.
