Goat Cheese Mashed Potatoes with Chives

Deliciously creamy potatoes with goat cheese and topped with chives.

Ingredients
- 5lbs Russet potatoes, peeled and cut into chunks
- 250g goat cheese, at room temperature
- 1 cup plain yogurt
- 3 tablespoons butter
- 1 to 1 1/2 cup of milk or cream
- 1/4 cup chopped chives
Directions
- Place the potatoes in a large pot and cover with water. Add about a tablespoon of salt to the water. Place the pot over high heat and bring to a boil. Cook the potatoes until they are fork-tender. Turn off the stove.
- Drain the potatoes and return them to the pot. Let the potatoes rest for about three minutes.
- Mash the potatoes until they are almost the consistency you are looking for.
- Add the goat's cheese, butter and a cup of milk. Continue mashing, adding more milk as needed, until everything is well incorporated and your potatoes are smooth. Stir in the chives. Serve and enjoy!
