Deliciously creamy potatoes with goat cheese and topped with chives.

Ingredients
5lbs Russet potatoes, peeled and cut into chunks
250g goat cheese, at room temperature
1 cup plain yogurt
3 tablespoons butter
1 to 1 1/2 cup of milk or cream
1/4 cup chopped chives
Directions
Place the potatoes in a large pot and cover with water. Add about a tablespoon of salt to the water. Place the pot over high heat and bring to a boil. Cook the potatoes until they are fork-tender. Turn off the stove.
Drain the potatoes and return them to the pot. Let the potatoes rest for about three minutes.
Mash the potatoes until they are almost the consistency you are looking for.
Add the goat's cheese, butter and a cup of milk. Continue mashing, adding more milk as needed, until everything is well incorporated and your potatoes are smooth. Stir in the chives. Serve and enjoy!
