A soft coconut chocolate cookie wrapped around a marshmallow. There are so many great flavours and textures and they just look so cool too!

Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup quick oats
1 cup sweetened shredded coconut
1/3 cup cocoa powder
1 teaspoon salt
1/3 cup butter, melted
1 can sweetened condensed milk
1 teaspoon vanilla
1 package large marshmallows
Directions
Mix graham cracker crumbs, oats, coconut, cocoa powder, and salt in a large bowl.
Mix melted butter, sweetened condensed milk, and vanilla in a separate bowl.
Pour the wet ingredients into the dry ingredients and stir until combined.
Grab yourself a small bowl of water and the marshmallows. Lightly dampen your hands with water, then grab one and a half tablespoons of the cookie dough and flatten it on your hand. Next, place the marshmallow in the centre of the flattened dough, wrap the dough around the marshmallow, and roll it like a snowball.
Drop the rolled cookie balls into the bowl coconut and coat the outside.
Place all cookies onto a plate or tray lined with parchment paper. Pop the cookies into the freezer and allow them to freeze for two hours. After two hours, remove the cookies from the freezer and, using a sharp knife, cut the cookies right in the middle. That’s it! Enjoy!
