Like many of the sweet things produced in this part of the world, these cookies get a bath of warm honey syrup, which soaks into them and transforms a crumbly cookie into a gorgeously dense, chewy treat.

Cookies
1 cup olive oil
6 tablespoons sugar
6 tablespoons orange juice
2 tablespoons brandy
3 3/4 cups pastry flour
1 teaspoon baking powder
1/2 teaspoon ground cloves
1/2 teaspoon baking soda
Syrup
2 cups honey
2 cups sugar
2 cups water
1 teaspoon ground cinnamon
2 cups walnuts, chopped, for garnish
Directions
Preheat oven to 350° F. In a large bowl, whisk the olive oil, sugar, orange juice, and brandy. In a medium mixing bowl, sift together flour, baking powder, cloves, and baking soda twice.
Add the twice-sifted dry ingredients to the oil mixture and mix with a spatula until the dough comes together, then knead gently a few times. Pinch off two and a half tablespoons. portions of dough and form into little flat oblongs (football shapes). Place on a parchment-lined baking sheet two inches apart. Bake for 30 minutes, until cookies are fragrant and lightly browned. Cool for five minutes, then gently push cookies close together in the middle of the tray.
Boil honey, sugar, water, and cinnamon for five minutes. Pour syrup over hot cookies. Allow to soak for 15 minutes, then remove from syrup and place on a large plate. Sprinkle with finely chopped walnuts, and serve, or store in an airtight container for up to one week. Enjoy!
