Ingredients
8 oz cream cheese, room temperature
1 1/2 cups butter, unsalted, room temperature
3 cups all-purpose flour
1/2 teaspoon salt
1 – 1 1/2 cups fruit preserves or jam
Directions
In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and cream cheese until light and fluffy. Add flour and salt and mix to combine into a dough. Wrap in plastic wrap and chill for an hour.
Preheat oven to 350° F. Dust the surface with granulated sugar, then roll out the pastry to one-eight of an inch thickness. Slice the dough evenly into two-inch squares.
Place a teaspoon of filling in the center of each square. Fold over opposite corners and pinch lightly to seal well. Bake for 13 to 15 minutes or until cookie edges just begins to brown. Cool completely on a rack, then dust with powdered sugar. Store in an airtight container for up to a week. Enjoy!
