Ingredients
2 cups basmati rice
2 teaspoons kosher salt
3 cloves
1 stick cinnamon
3 green cardamom pods
1 tablespoon canola oil
2 teaspoons cumin seeds
2 cups frozen peas
Directions
To a bowl, add basmati rice. Top with cold water and gently massage the rice grains until the water becomes cloudy. Drain, and top with more water. Repeat the process until water remains clear and soak for 30 minutes. Then, drain the rice.
Bring a pot of water to a rapid boil. Add salt, cloves, cinnamon, cardamom, and drained rice. After six minutes, add the green peas. Cook the rice until it is tender but still has a bit of bite (an additional minute). Drain and transfer to a baking sheet, spreading the rice into one even layer.
To a small pan on medium-high heat, add oil. Then scatter in cumin seeds and let them crackle for 10-15 seconds.
Pour the hot oil over the rice and gently fold to mix.
