This is a wonderful nutty rice pudding recipe seasoned with magical saffron and heavenly cardamom.

Ingredients
300ml whole milk
2 tablespoons sugar
A few strands of saffron
3 tablespoons rice flour
3 1/2 tablespoons ground almonds
1 cup condensed milk
1 tsp ground cardamom powder
15g almonds, roughly chopped
Directions
Pour the whole milk into a heavy-based pan and bring to a boil.
Transfer two tablespoons of hot milk into a bowl, add the saffron and set aside to steep and bring out the colour.
Turn down the heat and add the sugar to the boiled milk, stirring until it’s all dissolved.
Pour the steeped saffron milk and sprinkle over the rice flour and ground almonds.
Using a whisk, mix everything together until well blended.
Pour in the condensed milk and continue whisking for eight to 10 minutes until thickened.
Finish the Almond Phirni by stirring through the green cardamom powder.
Transfer to serving bowls and garnish with chopped almonds.
Allow to cool before popping in the fridge to chill thoroughly.
Serve cold as the perfect dessert for your Diwali celebration.
