Vanilla Panna Cotta

This simple, elegant sweet doesn't take too much; all you do is refrigerate the mixture until it sets and takes on a creamy, slightly jiggly texture. It’s the perfect make-ahead dessert for capping off a low-stress dinner party, whether you top it with fresh fruit or maple syrup.

Ingredients
- 1 cup cream
- 1/3 cup sugar
- 1 cup milk, divided
- 1 1/4 teaspoons unflavoured gelatin powder
- 1 teaspoon vanilla extract
- Jam, fresh fruit, or maple syrup
Directions
- Combine the cream and sugar in a medium saucepan and bring to a simmer over medium heat, stirring frequently until the sugar dissolves, about two to three minutes.
- Meanwhile, add about two tablespoons of the milk into a small bowl. Sprinkle over the gelatin and let it stand for one minute to bloom and absorb.
- Remove the cream from the heat, add in the gelatine mixture, and whisk until combined. Stir in the remaining milk and vanilla extract.
- Divide the panna cotta mixture between four serving bowls or glasses and transfer to the fridge to chill and firm up for at least five hours.
- Serve the chilled panna cotta topped with jam, fresh fruit, or maple syrup. Enjoy!
