BLT breakfast salad

Barley contains a special type of fiber to help lower blood cholesterol, plus the veggies offer fiber so why not consider having veggies at breakfast? This is a great make-ahead meal to save time.

Ingredients
Salad
- 1 cup barley, cooked
- 3 cups romaine lettuce, chopped
- 1 cup grape tomatoes, diced
- 1 cup cucumbers, diced
Salad Dressing
- 2 tablespoons canola oil
- 2 tablespoons cider vinegar
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Serve
- 4 hard cooked eggs, sliced
Directions
Salad
- In a large bowl, combine barley, romaine lettuce, grape tomatoes, and cucumber.
Salad Dressing
- In a small bowl, whisk together canola oil, apple cider vinegar, lemon juice, salt, and black pepper.
Serve
- Drizzle dressing over salad and toss.
- Top with sliced eggs. Serve and enjoy!
