BLT breakfast salad

Barley contains a special type of fiber to help lower blood cholesterol, plus the veggies offer fiber so why not consider having veggies at breakfast? This is a great make-ahead meal to save time.

Ingredients

Salad

  • 1 cup barley, cooked
  • 3 cups romaine lettuce, chopped
  • 1 cup grape tomatoes, diced
  • 1 cup cucumbers, diced

Salad Dressing

  • 2 tablespoons canola oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Serve

  • 4 hard cooked eggs, sliced

Directions

Salad    

  1. In a large bowl, combine barley, romaine lettuce, grape tomatoes, and cucumber. 

Salad Dressing 

  1. In a small bowl, whisk together canola oil, apple cider vinegar, lemon juice, salt, and black pepper. 

Serve 

  1. Drizzle dressing over salad and toss.
  2. Top with sliced eggs. Serve and enjoy!
