Ingredients
1 1/2 cups chickpea flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 to 1 1/2 cups milk or plant-based beverage
2 eggs
1/2 teaspoon vanilla extract
Directions
In a large bowl, whisk together the chickpea flour, sugar, baking powder, cinnamon, and salt.
Stir in milk or plant-based beverage. Whisk in eggs and vanilla until smooth.
Let the batter rest for five minutes.
Preheat the waffle maker and spray with non-stick cooking spray. Pour one-third cup to half a cup of batter, depending on the size of your waffle maker.
Cook waffles to desired doneness and top with fresh fruit/berries. Enjoy!
