Ingredients
- 1 1/2 cups chickpea flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 to 1 1/2 cups milk or plant-based beverage
- 2 eggs
- 1/2 teaspoon vanilla extract
Directions
- In a large bowl, whisk together the chickpea flour, sugar, baking powder, cinnamon, and salt.
- Stir in milk or plant-based beverage. Whisk in eggs and vanilla until smooth.
- Let the batter rest for five minutes.
- Preheat the waffle maker and spray with non-stick cooking spray. Pour one-third cup to half a cup of batter, depending on the size of your waffle maker.
- Cook waffles to desired doneness and top with fresh fruit/berries. Enjoy!
