Easy date caramel

This caramel sauce is so easy to make and there’s so much you can do with it. If you don’t like the coconut flavour of coconut oil, you can use refined coconut oil to avoid it. This sauce is higher in fiber than other sweeteners because of the whole date.

Directions

  1. Soak the pitted dates in boiling water for 10 minutes.
  2. Drain the dates and transfer them to a blender. Add maple syrup, coconut oil, and coconut milk and blend until very smooth. Start with a three-quarter cup of coconut milk and add more (one-quarter cup at a time) to reach the desired consistency.
  3. Transfer to an air-tight container and store in the fridge for up to seven to 10 days. This sauce can be frozen for up to three months. Enjoy!
