Prosciutto melon and arugula salad

Ingredients
Salad
- 4 cups arugula leaves
- 1/2 medium-sized cantaloupe
- 6-8 slices of prosciutto
- 1/2 cup feta cheese
- 1/4 cup toasted pine nuts
Dressing
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and black pepper, to season
Directions
Salad
- In a large salad bowl, add the arugula leaves. If the leaves are large, you can tear them into smaller pieces.
- Layer the sliced melon wedges on top of the arugula leaves.
- Tear the Prosciutto slices into smaller pieces and scatter them over the salad.
- Sprinkle the crumbled feta cheese and toasted pine nuts over the salad.
Dressing
- In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar until well combined. Season with salt and pepper to taste.
Assemble and Serve
- Drizzle the dressing over the salad, making sure to coat all the ingredients evenly.
- Gently toss the salad to combine all the ingredients and evenly distribute the dressing.
- Serve the prosciutto, melon, and arugula salad immediately and enjoy!
