Salad
4 cups arugula leaves
1/2 medium-sized cantaloupe
6-8 slices of prosciutto
1/2 cup feta cheese
1/4 cup toasted pine nuts
Dressing
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and black pepper, to season
Directions
Salad
In a large salad bowl, add the arugula leaves. If the leaves are large, you can tear them into smaller pieces.
Layer the sliced melon wedges on top of the arugula leaves.
Tear the Prosciutto slices into smaller pieces and scatter them over the salad.
Sprinkle the crumbled feta cheese and toasted pine nuts over the salad.
Dressing
In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar until well combined. Season with salt and pepper to taste.
