Summer rolls with peanut sauce

Summer rolls are a fantastic way to get veggies on your plate on a hot summer day because they are light, refreshing, and packed with fresh vegetables and herbs. The combination of cool and crisp vegetables like cucumber, carrot, and bell pepper, along with vibrant herbs like basil, mint, and cilantro, provides a refreshing burst of flavours that helps beat the summer heat. Inside you’ll see you also have your protein, which could be chicken, shrimp or tofu, and vermicelli noodles. And it’s all wrapped in rice paper.

Ingredients

Summer Rolls

  • Rice paper wrappers
  • 8 to 10 rice vermicelli noodles
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 1 avocado, sliced
  • 8 to 10 fresh basil leaves
  • 8 to 10 fresh mint leaves
  • 8 to 10 fresh cilantro leaves
  • Optional: Cooked shrimp, tofu, or chicken slices for protein

Peanut Sauce

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 garlic clove, minced
  • 2 to 4 tablespoons warm water, to achieve desired consistency

Directions

Summer Rolls

  1. Prepare the rice vermicelli noodles according to the package instructions. Once cooked, drain and rinse them with cold water to cool them down.
  2. Fill a large shallow dish or a pie plate with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it becomes pliable. Place it on a clean surface such as a cutting board.
  3. Arrange a small amount of rice vermicelli noodles, julienned carrot, cucumber, red bell pepper, avocado slices, fresh basil leaves, fresh mint leaves, cilantro leaves, and any additional protein (such as cooked shrimp, tofu, or chicken) in the centre of the rice paper wrapper.
  4. Gently fold the bottom of the rice paper wrapper over the filling, then fold in the sides, and roll it tightly to create a neat summer roll. Repeat this process with the remaining ingredients.

Peanut Sauce

  1. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, and minced garlic. 
  2. Add warm water gradually, one tablespoon at a time, until the desired consistency is achieved. The sauce should be smooth and pourable.

Serve 

  1. Serve the summer rolls with peanut sauce on the side for dipping. Enjoy!
