Cucumber mint watermelon spritz

A fresh and inspiring spritz made with summer flavours like cucumber, mint and juicy watermelon.

Ingredients

  • 1 cup watermelon, seedless and diced
  • 1/2 cup cucumber, diced
  • 8-10 fresh mint leaves
  • Juice of 1 lime
  • 2 tablespoons honey or simple syrup (optional)
  • Sparkling water or club soda, chilled
  • Ice cubes
  • Mint sprigs and watermelon wedges, for garnish (optional)

Directions

  1. In a blender or food processor, combine the diced watermelon, cucumber, mint leaves, lime juice, and honey or simple syrup (if desired). Blend until smooth and well combined.
  2. Strain the mixture through a fine-mesh sieve into a bowl or pitcher to remove any pulp or solids.
  3. Fill serving glasses with ice cubes, leaving some room at the top for the sparkling water.
  4. Pour the strained watermelon-cucumber mixture evenly into the glasses, filling them about halfway.
  5. Top up each glass with chilled sparkling water or club soda, gently stirring to combine.
  6. Garnish each glass with a sprig of mint and a small watermelon wedge, if desired.
  7. Serve the Cucumber Mint Watermelon Spritz immediately and enjoy the refreshing flavours.
