This is a grilled, non-alcoholic version of a fan favourite - the Pina colada. Orgeat is an almond syrup, a classic ingredient used in many tiki drinks. It has a nuttiness to it which will go so well with your tropical charred pineapple flavours.
1/2 cup charred pineapple cubes
1.5oz coconut milk
0.5oz lime juice
Charred pineapple rings (with dusted cinnamon), for garnish
In a shaker tin, muddle grilled pineapples and add coconut milk, lime juice and almond syrup. Add ice and shake vigorously for 10 to 15 seconds.
Strain into a rock glass filled with ice and garnish with charred pineapple and frond. Enjoy!
