Chimichurri beef
Ribeye or NY strip steak
Salt and black pepper
Olive oil
3-4 cloves garlic
1/4 cup olive oil
2-3 apple cider vinegar
1 bunch Italian parsley
1 bunch cilantro
2 limes

Boneless, skinless chicken thighs
1 teaspoon chili crisp
Pineapple
1 teaspoon hoisin
1 tablespoon soy sauce
1 teaspoon sesame oil
Green onions or chives
Directions
Chimichurri beef
Cut the steak into cubes and skewer, drizzle with olive oil and season with salt and pepper. Grill for two to three minutes a side or until the desired doneness.
To make the chimichurri, finely chop the shallot and garlic. Place in a bowl and add the apple cider vinegar. Set aside. Finely chop the cilantro and Italian parsley and add it to the shallot and garlic. Add in one-quarter cup of olive oil, the juice from two limes, salt and stir. Set aside.
To assemble, place the beef skewers on a platter and drizzle with the chimichurri. Provide the extra chimichurri in a small bowl for dipping, if needed. Serve and enjoy!
Greek salad grilled zucchini
Cut zucchini into medallions, skewer, season with olive oil, salt and pepper. Grill for four minutes a side or until the desired doneness.
To assemble, place on a platter, top with thinly sliced red onion, slice cherry tomatoes and chopped kalamata olives. Crumble feta on top and squeeze some fresh lemon juice and/or olive oil. Serve and enjoy!
Chilli crisp pineapple chicken
Cut chicken into cubes, lightly marinated in one tablespoon of soy sauce and one teaspoon of hoisin, then skewer. Grill on high heat for five minutes a side, or until cooked through.
Peel and cut pineapple into rounds, grill four rings until nicely charred, remove from grill and chop. Place pineapple in a bowl with one teaspoon of sesame oil and one teaspoon of chilli crisp, and toss to coat.
Top skewers with pineapple, sesame seeds, and chopped chives or green onions. Serve and enjoy!
