Ingredients
2 tablespoons canola oil
1 1/2 teaspoons sea salt
1 teaspoon black pepper
4 sprigs rosemary
750 grams beef tenderloin, cut into 1-inch (2cm) cubes
300 grams white cheddar (or pizza mozzarella), cut into 1 cm cubes
60 slices of baguette or crackers
Marshmallow roasting sticks or pre-soaked bamboo skewers
Directions
In a bowl, combine oil, salt, pepper and rosemary sprigs. Add beef; toss to coat. Refrigerate for at least one hour or overnight.
Skewer one cube of beef onto a stick or skewer. Over a campfire or grill heated to high, cook beef, turning, to the desired doneness. Meanwhile, in a pan over coals or grill, heat cheddar, stirring frequently, until completely melted.
Spread melted cheese onto one bread slice (or cracker), top with a cooked beef cube and sandwich with another cracker. Serve and enjoy!
