Chicken inasal

Chicken marinated in a mixture of calamansi, pepper, coconut vinegar and annatto, then grilled over hot coals while basted with the marinade.

Ingredients
- 4-6 pcs quarter leg chicken
- 1 cup lemongrass, roughly chopped
- 1/2 cup ginger, cut in slices
- 2 teaspoons minced garlic
- 2 small chillies, chopped
- 1 teaspoon salt and black pepper
- 2 cup lime juice
- 1 cup coconut vinegar
- 1 cup annatto oil
- 1 cup sprite or cooking wine
Directions
- Add chicken to a bowl and marinate it with lemongrass, ginger, garlic, chillies, salt, black pepper, lime juice, coconut vinegar, annatto oil and Sprite or cooking wine.
- Let chicken marinate for a minimum of two hours.
- Set chicken on the grill and sear both sides grill for 10 to 15 minutes per side and brush chicken with marinate as your cooking. Serve and enjoy!
