You want to serve this juicy watermelon salad made with feta and mint and delicious grilled lamb chops to your family over and over again.

Ingredients
Watermelon Salad
6 cups watermelon
Olive oil, for grilling
4oz feta cheese, cubed
2 tablespoons fresh mint, chopped
1 tablespoon chopped parsley
1 bunch fresh basil, chopped
2 limes, zest and juice
1-2 tablespoons honey
Splash of olive oil
Salt and black pepper, to season
Lamb Chops
8 lamb chops
2 sprigs fresh rosemary, chopped
2 garlic cloves, finely chopped
1/2 lemon, juiced
Pinch of salt and black pepper, to season
Big splash of olive oil
Directions
Watermelon Salad
Heat grill to high.
Cut watermelon into one-inch-thick slices and brush with olive oil. Grill watermelon slices until warmed through and grill marks show – about three minutes per side.
Take off the grill and cut the watermelon into one-inch cubes. Toss with fresh herbs and feta. Set aside
In a small bowl, whisk together lime zest and juice, honey, olive oil and salt and black pepper. Set aside for serving.
Lamb Chops
In a large bowl or resealable plastic bag, combine lamb chops, herbs, garlic, lemon juice, salt, pepper and olive oil. Mix well to coat evenly.
Place chops on the grill and sear for about two minutes on one side. Flip and cook for another three minutes for medium-rare.
Assemble and Serve
Assemble salad by drizzling vinaigrette over watermelon and feta mixture. Toss gently.
Divide onto plates and top with lamb chops. Enjoy!
