Dark chocolate salted caramel brigadeiros

Brigadeiros look like truffles, but they are a specific type of chocolate treat from Brazil. They are made with condensed milk and butter, and the outside is soft, just like the inside, whereas a truffle is covered in a thin shell of chocolate. These chocolates are a great project to make with the kiddos.

Ingredients
- 14 oz (414 ml) can condensed milk
- 1 tablespoon (15 g) unsalted butter, room temperature
- 1/8 teaspoon kosher salt
- 2 teaspoons Dutch-process cocoa powder, sifted
- 7 oz (200 g) dark chocolate, melted
- Cocoa powder, ground chocolate, sprinkles or crushed nuts
Directions
- In a pot set over low heat, combine the condensed milk, butter and salt. Heat until thoroughly melted.
- Stir in the sifted cocoa powder. Add the melted chocolate and cook until the mixture thickens and becomes shiny, about five minutes. The temperature should reach 180°F.
- Remove the pot from the heat and pour the mixture onto a baking sheet lined with parchment paper. Allow it to cool and set completely at room temperature.
- Once the mixture is cool, portion it out into one-tablespoon scoops. Roll the pieces into balls.
- Place the desired coating in a small bowl or on a shallow plate and roll the balls in it to coat them thoroughly.
- Store the brigadeiros in an airtight container at room temperature. Enjoy!
