Directions
Preheat a large skillet or griddle over medium heat.
Butter one side of each mini bread slice. Spread the other side of half the slices with any additional spreads (pesto, fig jam, etc.), if using.
Place a slice of cheese (and any additional ingredients like apple, avocado, etc.) on the unbuttered side of the bread, then top with another slice, buttered side out.
Grill the sandwiches until golden brown, about two to three minutes per side, pressing them down with a spatula for even browning.
Once the cheese is melted and the bread is toasted to a golden brown, remove from heat.
Let them rest for a minute before slicing into smaller, bite-sized pieces if desired.
