Gridiron Grilled Cheese

Mini versions of grilled cheeses will be sure to please everyone at the party. You can serve them with dipping sauces or garnishes tailored to each mini grilled cheese variety.

Ingredients
Classic Cheddar Mini
- Sourdough bread
- Aged cheddar cheese, sliced
- Unsalted butter for grilling
Smoky Gouda and Apple Mini
- Rye bread
- Smoked gouda cheese, sliced
- Thinly sliced green apple
- Unsalted butter for grilling
Pesto & Mozzarella Mini
- Ciabatta bread
- Fresh mozzarella cheese, sliced
- Pesto sauce
- Unsalted butter for grilling
Spicy Pepper Jack & Avocado Mini
- Whole wheat bread
- Pepper jack cheese, sliced
- Sliced avocado
- A pinch of chili flakes
- Unsalted butter for grilling
Brie & Fig Jam Mini
- Baguette
- Brie cheese, sliced
- Fig jam
- Unsalted butter for grilling
Directions
- Preheat a large skillet or griddle over medium heat.
- Butter one side of each mini bread slice. Spread the other side of half the slices with any additional spreads (pesto, fig jam, etc.), if using.
- Place a slice of cheese (and any additional ingredients like apple, avocado, etc.) on the unbuttered side of the bread, then top with another slice, buttered side out.
- Grill the sandwiches until golden brown, about two to three minutes per side, pressing them down with a spatula for even browning.
- Once the cheese is melted and the bread is toasted to a golden brown, remove from heat.
- Let them rest for a minute before slicing into smaller, bite-sized pieces if desired.
- Serve immediately, with dipping sauces or garnishes tailored to each mini grilled cheese variety. Enjoy!
