Evermore Edamame Dip

A light, healthy, and easy-to-make dip paired with vegetable sticks or crackers.

Ingredients

  • 2 cups shelled edamame, cooked and cooled
  • 1/4 cup tahini (sesame seed paste)
  • 1/4 cup water
  • 1/2 cup fresh cilantro leaves (or parsley if preferred)
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil (optional for a nuttier flavor)
  • Red pepper flakes for garnish (optional)

Directions

  1. In the bowl of a food processor, combine the edamame, tahini, water, cilantro, lemon juice, garlic, cumin, salt, and pepper.
  2. Process until smooth. While the food processor runs, slowly drizzle in the olive and sesame oils until fully incorporated.
  3. Taste and adjust seasoning as needed. If the dip is too thick, add more water a tablespoon, until the desired consistency is reached.
  4. Transfer the dip to a serving bowl. Garnish with a drizzle of olive oil and a sprinkle of red pepper flakes.
  5. Serve with pita chips, vegetable sticks, or as a spread for sandwiches or wraps. Enjoy!
