Evermore Edamame Dip

A light, healthy, and easy-to-make dip paired with vegetable sticks or crackers.

Ingredients
- 2 cups shelled edamame, cooked and cooled
- 1/4 cup tahini (sesame seed paste)
- 1/4 cup water
- 1/2 cup fresh cilantro leaves (or parsley if preferred)
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon sesame oil (optional for a nuttier flavor)
- Red pepper flakes for garnish (optional)
Directions
- In the bowl of a food processor, combine the edamame, tahini, water, cilantro, lemon juice, garlic, cumin, salt, and pepper.
- Process until smooth. While the food processor runs, slowly drizzle in the olive and sesame oils until fully incorporated.
- Taste and adjust seasoning as needed. If the dip is too thick, add more water a tablespoon, until the desired consistency is reached.
- Transfer the dip to a serving bowl. Garnish with a drizzle of olive oil and a sprinkle of red pepper flakes.
- Serve with pita chips, vegetable sticks, or as a spread for sandwiches or wraps. Enjoy!
