Any Cheese Dip

Pick your favourite cheese and turn it into a delicious, creamy, dreamy cheese sauce to dip your favourite chips in.

Ingredients
- 1 cup cream cheese, room temperature
- 4 to 5 heaped tablespoons mayonnaise
- 2 teaspoons Dijon mustard
- 2 garlic cloves, minced
- Pinch cayenne pepper
- 1 1/2 to 2 cups grated cheese, plus more for topping
- 2 tablespoons chopped herbs
- Mix-ins
- Chips, sliced baguette, or pull-apart pizza dough
Directions
- Heat your oven to 400ºF and lightly grease a 10-inch cast iron skillet or baking dish with non-stick cooking spray or oil.
- In a large bowl, beat the cream cheese and four heaped tablespoons of mayonnaise until smooth. Beat in the Dijon, garlic, and cayenne. Stir in the grated cheese, herbs, and mix-ins and add a bit more mayonnaise if needed so that everything is coated in the creamy mixture.
- See the recipe note below for pull-apart pizza dough cooked alongside the dip. If you want to make the dip, transfer the mixture into the prepared skillet or dish, top with some extra cheese, and bake for 15 to 20 minutes until bubbling and lightly golden brown on top. Let the dip stand for five to 10 minutes before digging in! Enjoy!
TIP: For pull-apart pizza dough that bakes alongside this cheesy dip, divide a ball of store-bought pizza dough into 16 pieces. Roll into tight-skinned balls and place around the edge of your prepared skillet or baking dish. Brush the tops with two tablespoons of melted butter and sprinkle with flaky sea salt. Transfer the cheese dip to the centre of the skillet or plate and spread it into an even layer so that it reaches the dough but does not cover it. Scatter extra cheese over the dip and bake for 25 minutes or until the dip is bubbly and the dough is golden and cooked through.
TIP: Feel free to add anything you think would taste suitable for the extra flavourings and mix-ins! Hot sauce, dry spices or seasonings, lemon juice, or even a splash of white wine would be delicious added to the base and mix-ins such as chopped bacon, crumbled sausage, caramelized onions, green onions, pickled jalapenos, roasted red peppers, any fresh herb, canned artichoke hearts, or frozen spinach would amp up the flavour!
