Chorizo queso

Creamy and oh so easy to make, this appetizer will become a crowd favourite. Serve with tortilla chips and extra chorizo on top.



  • 1 tablespoon olive oil
  • 1 cup chorizo
  • 1 clove garlic, minced
  • 2 cups milk
  • 1 cup Velveeta
  • 1 cup Monterey Jack cheese
  • 1 cup sharp cheddar cheese
  • 1 tablespoon chipotle chiles, pureed
  • Salt, to season
  • 2 green onions, thinly sliced


  1. In a large frying pan on medium-high heat, add olive oil and chorizo.
  2. Cook for seven to eight minutes, or until the chorizo is completely cooked through, and crispy.
  3. Remove from the pan and set aside.
  4. In a medium saucepan on medium heat, add milk and Velveeta.
  5. Cook until cheese completely melts into the milk, and the mixture becomes thick and silky.
  6. Then stir in monterey jack, cheddar, chipotle puree, and salt to taste and heat until completely melted.
  7. Pour hot Queso into a bowl and garnish with green onions.
  8. Serve with tortilla chips for dipping. Enjoy!
