Chorizo queso

Creamy and oh so easy to make, this appetizer will become a crowd favourite. Serve with tortilla chips and extra chorizo on top.

Ingredients
- 1 tablespoon olive oil
- 1 cup chorizo
- 1 clove garlic, minced
- 2 cups milk
- 1 cup Velveeta
- 1 cup Monterey Jack cheese
- 1 cup sharp cheddar cheese
- 1 tablespoon chipotle chiles, pureed
- Salt, to season
- 2 green onions, thinly sliced
Directions
- In a large frying pan on medium-high heat, add olive oil and chorizo.
- Cook for seven to eight minutes, or until the chorizo is completely cooked through, and crispy.
- Remove from the pan and set aside.
- In a medium saucepan on medium heat, add milk and Velveeta.
- Cook until cheese completely melts into the milk, and the mixture becomes thick and silky.
- Then stir in monterey jack, cheddar, chipotle puree, and salt to taste and heat until completely melted.
- Pour hot Queso into a bowl and garnish with green onions.
- Serve with tortilla chips for dipping. Enjoy!
