Chocolate Covered Stuffed Dates

These stuffed dates taste like a chocolate bar! But it's made with real food ingredients that you can feel good about eating. It's sweet with caramel flavour from the dates, delicious peanut crunch, and a smooth chocolate drizzle on top.

Ingredients

  • 12 Medjool dates
  • 1/4 cup all-natural smooth peanut butter
  • 1/4 cup raspberry jam
  • 2 tablespoons peanuts, chopped
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil
  • Pinch flaky sea salt (optional for sprinkling)

Directions

  1. Line a baking sheet with parchment paper. Cut a slit into the center of each date lengthwise, and remove the pit. (Be sure not to cut through as we want to stuff them!)
  2. Stuff the inside of each date generously with peanut butter and raspberry jam, and sprinkle with the peanuts. Place on the baking sheet.
  3. In a small bowl, combine the chocolate chips and coconut oil. Melt in the microwave in 30-second increments until smooth and combined; mix with a spoon. Drizzle the melted chocolate over the dates to coat. Optional to sprinkle with sea salt.
  4. Refrigerate the stuffed dates until the chocolate fully hardens, about 30 minutes. Enjoy!
