Mixed berry fool

Whipped cream and mixed berries? No need to say any more about this delicious dessert. 



  • 1 1/2 cups raspberries
  • 1 1/2 cups blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of kosher salt
  • 1 cup whipping cream, chilled
  • 1 tablespoon runny honey
  • Zest of one lemon
  • Shortbread (or your favourite cookies), crushed, for garnish


  1. Place the berries into a large mixing bowl and add the sugar, vanilla, and salt. Give the berries a gentle toss and leave them on the counter to macerate for 15 to 20 minutes.
  2. While the berries are doing their thing, whip the cream and honey until soft peaks form, ensuring you do not overwhip.
  3. Add the whipped cream to the berries and very gently fold the two together. Do not overmix - you’ll still want to see streaks of the white whipped cream throughout.
  4. Serve in small bowls or jars, top with lemon zest and crushed shortbread, and enjoy!
