Cajun coleslaw

To make it easy you can use the coleslaw kit with the kale in it to add some awesome crunch.

Ingredients

  • 1/4 red cabbage
  • 1/4 white cabbage
  • 2 carrots
  • 1 bunch kale
  • 4 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • Drizzle of honey
  • 1 bunch cilantro
  • 2 tablespoons Cajun seasoning, or more depending on how spicy you like it
  • Salt and black pepper, to season

Directions

  1. Start by prepping your veggies - using the bagged mix saves you a lot of time here! If you can't find a prepared bag, just make sure you get a fine slice of all your vegetables.
  2. Chop up your cilantro.
  3. Add all the vegetables to the bowl and add your lime juice and vinegar.
  4. Slowly add your mayo, one tablespoon at a time until you get the consistency you like best in your coleslaw. I always use about three or four tablespoons. 
  5. Add lime juice, honey, cilantro, and Cajun seasoning, taste and adjust the seasoning with salt and pepper. TIP: If you are serving this on a sandwich, I love to add an extra dusting of Cajun seasoning to give it a kick. Serve and enjoy!
