Moon mist ice cream sandwiches

Ice cream cookie sandwiches just got better thanks to this sweet and delectable recipe.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup pink and blue sprinkles (or your favourite sprinkles), plus more for garnish
  • 3 cups Moon Mist ice cream

Directions

  1. In the bowl of a stand mixer fitted with the paddle attachment or using a large mixing bowl and a hand mixer, beat the softened butter on medium until smooth, about a minute. Add the sugars and continue to beat for two minutes until the mixture is well incorporated, fluffy, and lightened in colour. Beat in the eggs, one at a time, then add the vanilla and continue to beat until well combined.
  2. In a separate mixing bowl, whisk together the flour, baking soda and salt. Add the dry and wet ingredients and switch to a silicone spatula or wooden spoon. Mix until just combined; it’s okay if a few streaks of flour are left. Tenderly mix in the sprinkles, making sure not to over-mix the dough. Cover and refrigerate for a minimum of an hour or up to three days.
  3. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  4. Portion the dough using a tablespoon scoop placing six balls of dough on each baking sheet, spaced evenly, as the cookies will spread when baked. Bake, one tray at a time, for 10 to 12 minutes, until the cookies are browned and perfectly round. Remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
  5. To make the cookie sandwiches, place a scoop of ice cream on the flat side of one cookie, sandwich it with another, and place it on a baking sheet lined with parchment paper. Repeat with reaming cookies. Place the baking sheet in the freezer and let the ice cream sandwiches firm up for about an hour. For additional fun, roll the edges of the ice cream sandwiches in more sprinkles and enjoy!
