Ingredients
Popovers
4 eggs, room temperature
1 1/2 cups milk, room temperature
3/4 teaspoon salt
1 1/2 cups all-purpose flour
1/4 teaspoon cinnamon
3 tablespoons butter, melted
1/4 cup vegetable oil - for pan
Apple Cinnamon Cereal Dust
2 cups apple cinnamon cereal (cheerios or apple jacks) blitzed
1 1/2 cup sugar
1 1/2 tablespoons cinnamon
1/2 cup melted butter - for brushing
Salted Maple Caramel
1/2 cup maple syrup
1 tablespoon butter
2 tablespoons heavy cream
Pinch salt

Crack eggs into a blender, add milk, flour, salt, cinnamon, and melted butter and blend until thoroughly combined. Set aside to rest for 1 hour.
Preheat the oven to 450 F/232C.
Place one tablespoon of oil in each cup of the popover pan. Place the pan in the oven to preheat for 5 minutes.
Carefully remove the pan and pour the batter, dividing evenly into each cup of the pan (to about half full each). Place back in the oven to bake for 20 minutes.
Lower heat to 350 F/177C and cook for an additional 10 minutes.
Maple Caramel
Add maple syrup to a heavy-bottomed saucepan. Bring the maple syrup to a slow boil until it reduces to half its volume. Add butter, stirring gently. Pour in heavy cream, sprinkle with salt and fold until combined and creamy. Remove from heat.
Apple Cinnamon Cereal Dust
Add the blitzed apple cinnamon cereal, sugar and cinnamon to a bowl.
Assemble and Serve
Remove popovers from the oven and carefully pierce a small hole with a knife. This will allow the steam to escape while keeping its volume.
When popovers are cool enough to touch, take turns brushing each popover in melted butter and then coating it in Apple Cinnamon Cereal Dust.
