Create a restaurant-worthy Smash burger at home — a thin beef patty with a caramelized, crispy crust topped with cheese and all the fixings. Plus, Spencer Watts shows us how to step up our burger bun game with this sour cream and onion chip-version.

Ingredients
French Onion Gravy
1 1/2 cups of yellow onions, sliced
1 tablespoon oil
2 tablespoons thyme (fresh)
Pinch of salt
1 3/4 cup beef stock
Freshly ground pepper, for serving
Smash Burgers
10 oz (567 g) ground beef
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 tablespoon vegetable oil
2 slices Gruyère cheese
Sour Cream and Onion Chips Buns
1/4 cup crushed sour cream and onion potato chips
1 teaspoon white sesame seeds
1 teaspoon black sesame seeds
1 pinch of salt
1 egg white, whisked, for brushing
2 brioche burger buns
Basil Mayo
1/2 cup mayonnaise
3 tablespoons roasted garlic
10-15 fresh basil leafs
Directions
French Onion Gravy
Heat vegetable oil in a skillet over medium-high heat and add sliced onions. Lower the heat and cook, stirring often for 15 minutes. Add thyme and salt. Continue to cook and caramelize for another 40 minutes. Pour beef stock into the skillet and scrape caramelized bits from the bottom of the pan using a spatula. Pour the contents of the skillet into a blender and blitz until smooth. Season to taste and set aside. Reheat if necessary before serving. Add fresh ground pepper to finish.
Smash Burger
Add ground beef, garlic powder, onion powder, salt, and freshly ground pepper to a bowl and combine. Divide the beef mixture into two equal portions, shape it into balls, and reserve it.
Sour Cream and Onion Chips Buns
Preheat the oven to 350 F /177C.
To a large sealable plastic bag, add sour cream and onion potato chips, white sesame seeds, black sesame seeds and bash with a rolling pin to a coarse crumble. Brush a layer of egg white to the top of each brioche bun and sprinkle with chip mixture. Place bun tops on a baking sheet and bake for 2 minutes to lightly toast. Remove from the oven.
Basil Mayo
Add mayonnaise, roasted garlic and basil to a mini chopper and blitz until smooth and creamy. reserve
Smash Burger Continued
Heat vegetable oil in one large (or two medium) non-stick skillet(s) over high heat. Transfer beef portions to the hot skillet(s). Place a square of parchment over the beef and press it into a patty using the bottom of a plate, adding extra pressure to flatten it firmly against the hot skillet. Cook for 2-3 minutes, and flip the patty. Add a slice of gruyere cheese to the top of the patty and continue cooking for another 1-2 minutes or until the cheese has melted.
Assemble the Smash Burger
Slather the top and bottom of each Sour Cream and Onion Chip Bun with basil Mayo and add the burger patties. Serve with hot French onion gravy. Enjoy!
