30-Minute Chicken Patties

Ingredients
- 3/4 bunch cilantro, washed, dried, ends removed, including stems and leaves
- 1 onion, white, medium, cut in half
- 5 cloves garlic, fresh, whole
- 1 inch ginger, fresh, peeled
- 3 green chillies, washed, dried, tops removed, whole
- 3 chicken breasts, approximately 600 grams, skinless, boneless
- 2 teaspoons oregano, dried
- 2 teaspoons black pepper, coarse
- 1 1/2 teaspoons smoked paprika
- 2 teaspoon salt or sea salt
- 1 1/2 tablespoons olive oil, for frying
Directions
- Add all the ingredients (in the order listed) to a food processor and pulse to process. Be careful not to over-process
- Using clean hands, transfer the mince mixture onto a board or plate, shape it into a circle and divide it into eight portions.
- Shape each portion of minced chicken into a patty using your hands. There is no need to refrigerate them.
- Heat half the olive oil in a large nonstick pan over medium heat to cook raw chicken patties. Then, carefully add four chicken patties and fry for 2 minutes.
- Use a spatula to flip the patties and cook for another minute carefully. Then cover the pan and cook for 3 minutes on medium heat or until golden brown.
- Flip them once more and cook for one last minute. Then, remove the patties from the pan and let them rest on a plate for 5 minutes. Repeat the process with the remaining uncooked chicken patties and olive oil.
- Serve immediately with a squeeze of fresh lemon juice – which is optional. Enjoy!
TIP: If you’re not a fan of cilantro, you can substitute it for parsley or basil. – I like to add a bit of spice, but feel free to adjust the number of chillies to your taste. – You could also use garlic powder.
